The Send Off | Banapple Bread

I'm not good at saying goodbyes.

With three kids already off to college, you might think that I would be a pro at saying goodbye... But nope, I'm a sappy mom!  I cry at the sight of  a packed suitcase in the hallway.  My voice cracks when they tell me their flight schedule.  But the worst is when I take them to the airport... ahh it's a different scenario when I tightly clasp their hands as we stand in line to check in for their flight.

"Drama-rama!" my kids tease me.  And drama-rama it was indeed when I sent my daughter off a few weeks ago.  I stood at the entrance of the security gate in silence, as she left my side to go through security.  I could feel my heart pound faster... and my lacrimal glands increase its productivity as tears welled up in my eyes.  Oh the drama.

"Mom, I'm coming back," she assures me.

Deep down inside I know she will be home again, just like my two other kids.  I also know that my home-cooked meals will be one of the driving forces that bring them all back.  Because it is here, back home, where they can enjoy all of their favorite dishes that their dorm/apartment enclaves cannot offer them.  Yes, food connects them to home.  And that's why I send them off with more food when they leave... homemade goodies which will surely have them looking forward to their next homecoming.

Mom, this banapple bread is delicious! My friend, Gerleroz, loves it... read the text from my daughter, Izzy, a few hours after she landed at LA.

I knew then that she misses home just as much as I miss her. But, at least for now, a bite of my banapple will give her a taste of home.

Banapple Bread



Ingredients

for the bread:
Ingredients:

2 cups flour
1 tsp baking powder
1 tsp baking soda
1 1/2 cup sugar
1tsp salt
2 large eggs
1 tsp vinegar or lemon juice
3 large bananas
1 cup milk
1/2 cup roasted peanuts

For apple crumbs
1/2 cup brown sugar
1 cup flour
1 pc apple sliced
1 stick butter
1 tsp cinnamon
1/2 tsp nutmeg

Directions:

Pre-heat oven at 350 F.

Grease pan with butter.
Make the apple crumbs by stirring together sugar, flour, cinnamon and nutmeg. With a pastry blender, cut butter  until mixture is course add apple slices.  Set aside in the fridge.

In a mixing bowl,  mix together flour, baking soda and baking powder.  Add in salt and sugar.

In another bowl, mash the bananas.  Pour in the milk and beat the eggs.  Add the flour mixture little by little.  Add vinegar and mix thoroughly.

Pour into a baking pan.  Add the streusel on top of the banana bread.

Bake for about 30 - 40 minutes. Let it cool.

    Please don't remind me that I will be doing the same thing soon. But at least you could always lure them back because of your wonderful cooking. I will make this bread over the weekend. I hope to remember to take pictures and share it with you sweets,

  3. Wow I am not sure how will I handle this situation when my daughter goes to college. I still have few more years to prepare.
    BTW I love that topping, I never tried that on banana bread yet

  4. I love the topping on your bread. What a great idea. Just wait until you have to say good bye to the grandchildren too. I just did that last week and they were as sad as I was.

      How are you? It's been awhile. I know that's what my mom tells me too. I told my kids that we should have a one city to live option. I know that ain't gonna happen :(

  5. I'm just like you Malou. I miss my children terribly when they're away and I think I always will. It's always so sad to say goodbye even though it may only be a short while before I see them again. This dessert looks really delicious and just like something my teenagers would love xx

  8. First, you left a lump in my throat when you described how you said "goodbye" to your daughter. I knew exactly how you felt and I'm sitting here thinking of my own kids, wondering when they'll be home again. Sigh! That said, you and I think so much alike. I have apples, I have bananas and I was searching for recipe ideas. I think you have another winner here, Malou. Must try this one. I'll let you know how it turns out.     Second, Janice and I are both proud mamas of little 1-year-old mestizo boys -- can you believe it (it seems like just yesterday we were eating lunch talking about having children)?

    Love this bread recipe! Since it's cloudy today, I think it may be cool enough to bake it tonight for our family barbecue this weekend. I'm sure it will be well received!

  12. I feel for you dear - i left a comment before but probably didn't get posted... Anyhow, looks yum, I love banana bread, and so far the ones I've tried from scratch don't come out better than the boxed ones (I know, I'm a big "cheater" hehehehe!)!

    Try some of your own comfort food dear and eat it knowing your kids are enjoying the same thing you are. :-)

  14. I know what you mean about saying good-bye and crying. I'm at least 14 years ahead of you since my two children were in college, and they were overseas for their first 2yrs, on scholarship. To think, that I only saw them once a year, broke my heart. It's normal to be crying, and you're such a good Mom!

    I love your banana bread with the crunchy apple topping...very clever! The only thing that I would change is to reduce the sugar to 1 cup...otherwise i would leave everything exactly the same. Something about the vinegar which I also add sometimes, is that acidity that gives it a special zing, and perfect texture...superb!

    Thank you, for being a reminder of how FOOD can be one of the strongest ties that bind families, if we just give time to create our very own family food traditions/rituals (like your send-off treats)... I really hope I get to approach cooking with reckless abandon soon...
