the graduate

She handed me an apron as a welcome gift when I walked in into her apartment. "Mom, I got this for you at a Japanese store," she said. Then she added, "there's chicken in the freezer, Mommy." I smiled . I got the subtle message; she was asking me to cook her something delicious during my short visit. I joined her for a little more than a week in Berkeley to help her move out of her apartment and to attend her last graduation. Albeit my stay involved a lot of packing her apartment into boxes, she showed me glimpses of her everyday life as a student at UC Berkeley.

One day, she showed me her favorite quaint cafe, where she loves to study in one afternoon. On the way to campus, she would say things like, "This is my daily walk to school" or "this is what I like to order whenever I come in here." On the first day of moving, she told me that she had work but that she didn't want me to be left alone at her apartment. So she took me to a cafe.

"Are you sure you'll be alright?" she asked me again before she hurriedly walked away as she was late for work. I smiled as I watched her leave me at her favorite coffee shop. My daughter is all grown up.

Seeing her as a young adult warmed my heart as much as the warm chai latte that she bought me.  As a mom of a new graduate, I was overwhelmed with mixed emotions. I'm still euphoric. Who wouldn't be? I can't even begin to tell you how elated I am with her plans. She is graduating with two majors from UC Berkeley, has a summer internship in Washington DC lined up for the summer, is writing an honors thesis while applying to law schools in the fall. As a mom these are the moments we live for.

Throughout the week, I walked around the campus, tracing her daily steps. I sat in her favorite Brazilian place, I did our laundry with her in the laundromat (which was my first time to ever be in one; it was scary), I went to her church for Sunday mass. I hung out with her friends; I slept in her room. I was trying to immerse myself with the community that made my daughter grow.

So when she told me that there was chicken in the freezer, I welcomed her request for me to bring a piece of our home to her Berkeley home. I took the apron and I cooked an old time favorite of  hers: fried chicken a la Jollibee.

Jollibee is the biggest fast food chain in the Philippines. Among their best sellers are Filipino blend burgers, crispy fried chicken and Filipino spaghetti. Their fried chicken is usually paired with spaghetti which I featured a few posts ago. (Spaghetti a la Jollibee here)  This is my take on their popular Chickenjoy.

Fried Chicken a la Jollibee




Ingredients:
8-10 pcs chicken thighs and legs
lemon
salt and pepper

For the breading:
1/2 c cornstarch
1/2 c flour
salt &;pepper
1 tbsp five spice (five spice is an acquired taste so if you may add a minimum of 1tbsp first and adjust as you please)

Procedure:
Marinate chicken with lemon and salt and pepper overnight or at least 30 minutes.

 Fill a large skillet (cast iron is best) about  half full with vegetable oil. Heat until VERY hot.. Meanwhile, roll the chicken pieces into the breading.
Shake off excess flour.
Drop  5-6  pieces into the hot oil.
Make sure there's enough space to stir the chicken.
Deep fry it until golden brown.
Drain the fried chicken.
 It should be crispy goden brown like so:

  1. We have a Jollibee in my neighborhood, but I've never eaten there even though it's VERY popular. Now I can see why...it must be the 5-spice. I'm going to have to give it a try.

  4. I have two grown sons who now live on their own, and our youngest is wrapping up her sophomore year. Two years and she will be away in college...Your post made me feel melancholy...and the fried chicken you made your daughter looks delicious. Love the presentation too!!! Kudos, Mom..You have much to be proud. Congrats!

  8. I love jollibee my kids are the ones who addicted to chicken joy, so I also do the same at home but I make boil the chicken first with seasoning then I let it dry and roll it on the instant breading =)

  9. Congratulations to you and your daughter. She seems like a very good girl with kind heart and a good student. You must be very proud of her. But she sees you growing up and I can see why. :-) I wish I can be in the same position as you are in right now in... 15+ years or so. :-) I am sure your chicken made her really happy and miss your home cooking. I left Japan when I was 20 to come to school here, and after reading your story, I wonder how my mom felt... Thanks for heart warming story Malou!

  15. After my son's college graduation, I came home to a Facebook post entitled "all growed up" with his grad pictures. Poignant to be sure. And now when he has ingredients for me to cook - I smile. It was not all for naught! And - oh yes- the chicken is perfect! As were your days.

  19. I've cooked this recipe today and it did not turn out well. The fried chicken turn out dark , it look like over cook . The measurement of the five star spice wrote as 4 tablespoon and this was the reason why my fried chicken turn out darker. I noticed there was a sweet taste from the dark caramelized of the five star spice and 4 tablespoon for me was too much. Sorry :(

    2. I'm so sorry to hear that. But thank you for sharing this info with me. I've been cooking this chicken for years and it always turn golden brown just like in the picture... This is definitely one of the "staple" food I cook for my kids. but no worries let me check the measurements again just the same.
      Now one of the reasons that I could think of is that the cooking oil's temp maybe too hot. This happened to me before too and the taste of the chicken is definitely BURNT. Again thank you for giving me this feedback. It means so much to me.

    1. sorry for the late reply...Five spice is a blend of 5 different spices used in Asian cooking. IT's sold i a packet or in a botte. If it's not available, you can mix the ff:
      1 tablespoon Ground anise
      1 tablespoon Black peppercorns
      1 tablespoon Ground cinnamon
      1 tablespoon Ground cloves
      1 tablespoon Fennel seeds

  23. I love making this recipe, Thanks for sharing it and just want to let you know how my family and I loved it, no need of buying it at Jollibee and it saves me more $$$.   25. Thank you for such a great recipe. I have a whole turkey left from my husband's company. They always give turkey for thanksgiving. However,we decided to do something different. We heard of deep frying turkey. However, it is just 2 persons and 2 children in the house. So we decided to make it into fried turkey pieces. It was surprisingly good. We already made the other turkey parts into caldereta. He was like leave some turkey for fried turkey ala jollibee.

  26. Thank you for the wonderful recipe. I used turkey instead of chicken. Surprisingly, the turkey doesn't have the gamey taste with the breading mix. I love it. (I have more turkey parts in the freezer to make Fried Turkey ala Jollibee) Thank you for such a delicious recipe. This does not make me crave jollibee anymore.

  27. Thanks for posting your recipe and video, I've been wanting to cook fried chicken similar to Jollibee with crispy skin but couldn't achieve the right flavor and crispiness. Can you please share your recipe for the gravy? I just feel that it's not the same without their gravy.. thanks again

    1. Thanks for the comment: Here's my simple recipe for the gravy. You could adjust the consistency according to your own preference... but here's the basic recipe: toast 2 tbsp of the breading mix... when it's slightly brown, add 2 tbsp butter and stir... cook for 3-5 minutes. Pour a cup of soup stock. Stir continuously to avoid lumps. The gravy should start to thicken. Season with salt and pepper... You could even season with light soy if you want. Good luck.
